Tomato Salad with Balsamic Vinegar

Chopped tomatoes, chopped green onion, and chopped fresh basil tossed with mixture of extra virgin olive oil, balsamic vinegar, salt and pepper. Bell peppers halved and filled with tomato salad.

Ingredients -
4 cups chopped Fresh Tomatoes
2 bunches of Green Onions with tops, finely chopped
1/2 tablespoon Extra Virgin Olive Oil
1 cup Balsamic Vinegar
1/2 teaspoon Salt
1/2 teaspoon Fresh Ground Black Pepper
1 cup chopped Fresh Basil
1 Yellow Bell Pepper
 
Preparation:

1. Add chopped tomatoes, chopped green onion and chopped fresh basil to medium salad bowl.

2. In separate small bowl, add extra virgin olive oil, balsamic vinegar, salt and pepper. Whisk to combine.

3. Pour dressing over the tomatoes.

4. Marinate at room temperature for two hours.

5. Cut the yellow pepper in half, removing all seeds and pulp.

6. Fill with the tomato mixture.

7. Put left over mixture in a small bowl in the center of serving plate with pepper halves on either side.
