Caribbean Turkey Salad

Broiled turkey brushed with mixture of soy sauce, honey, ginger and garlic. Curly Chinese noodles topped with sliced papaya, sliced bell pepper and thinly sliced red onion. Salad is topped with broiled turkey, garnished with fresh chopped cilantro and served with spicy dressing prepared from vegetable oil, fresh lime juice, honey, crushed red pepper, and ground allspice.

Ingredients -

Spicy Dressing (recipe below)
8 ounces Curly Chinese Noodles or Linguine
1/4 cup Soy Sauce
3 tablespoons Honey
1 tablespoon chopped Gingerroot or 1 teaspoon Ground Ginger
1 Garlic Clove, finely chopped
1-1/2 pounds Turkey Breast Tenderloins, about 1/2-inch thick
2 Papayas, peeled and sliced
1 small Red Bell Pepper, sliced
1 small Red Onion, thinly sliced
1/4 cup chopped Fresh Cilantro or Parsley

Spicy Dressing:
1/4 cup Vegetable Oil
3 tablespoons Lime Juice
2 tablespoons Honey
1/4 teaspoon Crushed Red Pepper
1/4 teaspoon Ground Allspice

 
Preparation:

1. Prepare Spicy Dressing.

2. Cook and drain noodles according to package directions. Rinse with cold water. Drain.

3. Set oven control to Broil.

4. Mix soy sauce, honey, ginger and garlic.

5. Place turkey on rack in broiler pan; brush with soy sauce mixture.

6. Broil with tops 4 to 6 inches from heat 15 to 20 minutes, turning once and brushing with soy sauce mixture, until juice of turkey is no longer pink when centers of thickest pieces are cut.

7. Discard any remaining soy sauce mixture.

8. Cut turkey into thin diagonal slices.

9. Arrange noodles, papayas, bell pepper and onion on 6 serving plates.

10. Top with turkey.

11. Sprinkle with cilantro. Serve with dressing.

Spicy Dressing:

1. Add vegetable oil, lime juice, honey, crushed red pepper, and ground allspice to a small bowl.

2. Whisk to combine.

Soy sauce is prepared from a mixture of fermented soy beans and wheat, which are aged up to two years before the liquid is strained off and bottled.

Allspice berries are the size of peppercorns when harvested and green in color. The berries are sun-dried, turning brown in the process. The allspice berry can be purchased in its dry form both whole and ground.
