Spicy Black Bean Potato Salad

Eggs and potatoes are cooked until potatoes have softened and eggs are had cooked. Bacon is fried until crisp, drained and crumbled. Chopped hard cooked eggs, crumbled bacon, black beans, diced green onions, diced jalapeno peppers, diced bell pepper, real mayonnaise, brown mustard, and Cajun seasoning are tossed gently with cooked potatoes. Salad is seasoned with salt and pepper and garnished with crumbled bacon.

Ingredients -
8 Medium Red Potatoes
4 Eggs
8 Bacon Slices
1 (15 ounces) can Black Beans, drained and rinsed
3 Green Onions, diced
3 Fresh Jalapeno Peppers, diced
1/2 Green Bell Pepper, diced
2-1/2 Cups Mayonnaise
2 tablespoons Brown Mustard
1 teaspoon Cajun Seasoning
Sea Salt, to taste
Fresh Ground Black Pepper, to taste
 
Preparation:

1. Place potatoes in a pot with enough water to cover. Bring to a boil, and cook until tender. Drain, dice, and cool.

2. Place eggs in a pot with enough cold water to cover. Bring to a boil and immediately remove from heat. Cover saucepan, and let eggs stand in hot water for 10 to 12 minutes. Drain, cool, peel and chop.

3. Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain, crumble and set aside.

4. In a large bowl, mix chopped eggs, 1/2 the bacon, black beans, green onions, jalapeno peppers, bell pepper, mayonnaise, mustard, and Cajun seasoning.

5. Gently mix in diced, cooled potatoes.

6. Season with salt and pepper, and sprinkle with remaining bacon.

7. Cover, and refrigerate until ready to serve.

Red Potatoes

The red potatoes can be cut in advance of boiling. While the potatoes are easier to handle and will cook faster when diced in advance, red potatoes will tend to disintegrate a little more easily when diced before cooking.

Chili Peppers

Jalapeno peppers are considered medium hot. Poblano peppers are also medium hot and could be used in place of the jalapeno peppers if necessary. The serrano pepper is considerably hotter and could be used if desired to add additional heat. Diners should be made aware of any peppers in the salad before eating.
