Herb Potato Salad

Diced cooked potatoes, finely chopped red onion, chopped fresh tarragon, chopped fresh parsley tossed with dressing prepared from white wine, vegetable stock, fresh lemon juice, minced garlic, Dijon mustard, salt and pepper.

Ingredients -
3 pounds Small White Potatoes
Kosher Salt
2 tablespoons Dry White Wine
2 tablespoons Vegetable Stock
2 tablespoons Lemon Juice
2 Garlic Cloves, minced
1/2 teaspoon Dijon Mustard
Freshly Ground Black Pepper
2/3 cup Extra Virgin Olive Oil
1/4 cup finely diced Red Onion
2 tablespoons chopped Fresh Tarragon
2 tablespoons chopped Fresh Italian Parsley

Preparation:

1. Place the potatoes and 2 tablespoons salt in a large pot of water.

2. Bring the water to a boil.

3. Lower the heat and simmer for 10 to 15 minutes with the vegetable stock, until the potatoes are barely tender when pierced with a knife.

4. Drain the potatoes in a colander.

5. Place the colander with the potatoes over the empty pot off the heat and cover with a clean, dry kitchen towel.

6. Leave the potatoes to steam for 15 to 20 minutes, until tender but firm.

7. Meanwhile, in a small bowl, whisk together the wine, vegetable stock, lemon juice, garlic, mustard, 2 teaspoons salt and 3/4 teaspoon pepper.

8. Slowly whisk in the olive oil to make an emulsion.

9. Set aside.

10. When the potatoes are cool enough to handle, cut them into quarters or halves, depending on their size.

11. Place the cut potatoes in a large bowl and pour enough dressing over them to moisten.

12. As the salad sits, you may need to add more dressing.

13. Add the onion, tarragon and parsley, and salt and pepper to taste.

14. Toss well.

15. Cover and refrigerate for a few hours to allow the flavors to blend.

16. Serve cold or at room temperature.

Salad Making Tips
Salt

Salt provides the body with sodium and chlorine, nutrients that are necessary to balance the body’s fluids. Salt is important to muscle and nerve activity.

Salad Making Tips
Fresh Tarragon

Fresh tarragon has a subtle, sophisticated flavor, and should be used sparingly as the flavor diffuses quickly through dishes. Fresh tarragon should be stored in a plastic bag in the refrigerator.
