Indian Style Egg Salad

Sautéed red onion, minced jalapeno, ginger, turmeric, cayenne, and hard cooked egg tossed with finely diced tomato fresh chopped cilantro and sea salt.

Ingredients -
2 tablespoons Vegetable Oil
1/2 Small Red Onion, finely dice
1 Jalapeno, seeded and minced
1/4 teaspoon Ginger
1/4 teaspoon Turmeric
1/8 teaspoon Cayenne Pepper
6 Hard-Boiled Eggs, peeled and cut into large dice
1 Small Tomato, finely diced
2 tablespoons Fresh Cilantro, chopped
Sea Salt, to taste
 
Preparation:

1. Heat the vegetable oil in a non-stick skillet over medium-high heat.

2. Saute the red onion until tender which takes about 4 minutes.

3. Add the minced jalapeno, ginger, turmeric and cayenne.

4. Saute until it's fragrant which takes about 1 minute.

5. Add the eggs, stirring constantly to blend the flavors which takes about 2 minutes.

6. Remove from the heat and stir in the tomato, salt and cilantro.

7. Serve at any temperature.

Sea Salt

Sea salt will keep indefinitely if stored properly. Keep in a cool location, that is relatively humidity free to avoid caking and solidifying.
