Black Bean, Fresh Corn, And Red Pepper Salad

Red onions, black beans, whole corn, bell pepper and fresh parsley tossed in a dressing highlighted with coarse grain mustard.
Ingredients -
1/3 cup Cider Vinegar
3 tablespoons Light Corn Syrup
1 tablespoon Coarse-Grained Mustard
1 teaspoon Canola Oil
1/2 teaspoon Salt
1/4 teaspoon Freshly Ground Black Pepper
1 small Red Onion, diced
2 cups canned Black Beans, drained and rinsed
1 cup Fresh Sweet Corn Kernels, cooked and cooled
1 large Red Bell Pepper, trimmed and diced
2 tablespoons chopped Fresh Parsley
 
Preparation:

1. Add cider vinegar, light corn syrup, coarse grained mustard, canola oil, salt, and pepper to large serving bowl.

2. Whisk to combine.

3. Stir in diced red onion and black beans, fresh sweet corn kernels, diced red bell pepper, and fresh parsley.

4. Toss well.

5. Adjust the salt and pepper to taste.
