White Bean Salad

Green onions, red bell pepper and white beans tossed with a vinaigrette of olive oil, lemon juice, and parsley. Served over salad greens and garnished with walnuts.
Ingredients -
1/4 cup chopped Fresh Parsley
1/4 cup Olive Oil
3 tablespoons Lemon Juice
1/2 teaspoon Pepper
1/4 teaspoon Salt
1/4 cup sliced Green Onions (3 medium)
1 small Red Bell Pepper, chopped (1/2 cup)
2 cans (15 to 16 ounces each) Great Northern Beans, rinsed and drained
1/2 cup chopped Walnuts
Salad Greens, if desired
 
Preparation:

1. Add fresh parsley, olive oil, lemon juice, salt and pepper to jar.

2. Seal lid tightly and shake.

3. Alternately, you could add all ingredients to a medium bowl and whisk.

4. Add green onions, red bell pepper, and great northern beans to serving bowl.

5. Pour in vinaigrette.

6. Cover and refrigerate at least 1 hour to blend flavors.

7. Sprinkle with walnuts.

8. Serve over salad greens.

Storing Greens

Rinse and dry greens before storing. Place dried greens in plastic bag or airtight containers. Properly stored they will last from several days to several weeks, depending on the type of green.
