Ingredients -
1 (16 ounces) can Garbanzo Beans, rinsed and drained
1 Mango, peeled and diced
1 cup Hearts of Romaine
1/2 cup Cucumber, diced
1/2 cup Carrot, diced
1/4 cup Celery, diced
2 tablespoons Fresh Lemon Juice
Kosher Salt, to taste
1 cup Pineapple, chopped
Preparation:
1. In a large bowl toss together the mango, garbanzo beans, romaine lettuce, carrot, cucumber, celery, lemon juice, and sea salt.
2. Let the mixture set for 30 minutes.
3. Top the salad with the pineapple to serve.
