Orange Avocado Salad

Orange dressing prepared from vegetable oil, grated fresh orange peel, fresh orange juice, white sugar, fresh lemon juice, ground dry mustard, and coarse salt. To serve, orange slices, avocado slices, thinly sliced onion arranged on salad greens and served with dressing.

Ingredients -
3 Oranges, sliced
2 Avocados, sliced
6 Thin Red Onion Slices , separated into rings
Salad Greens

Orange Dressing:
1/3 cup Vegetable Oil
1 teaspoon grated Fresh Orange Peel
Juice from 1/4 Fresh Orange
2 tablespoons Sugar
2 tablespoons Lemon Juice
1/2 teaspoon Ground Dry Mustard
1/4 teaspoon Coarse Salt
 
Preparation:

1. Prepare the orange dressing by adding all of the ingredients in a covered container.

2. To prepare the salad, arrange the oranges, avocados and onion on salad greens on 6 salad plates.

3. Serve with the dressing.

Red onions have a papery skin on the outside that should be removed before cutting. The paper like skin protects the onion from losing moisture and should be left on until ready to use. Red onions should be stored in a cool dry location. Once cut, store unused portions in plastic bags in the refrigerator.
